The Poutine was a dish created in centre-du-Quebec in the 1950’s and became more main stream known in Canada and the States in the late 80’s. What is not so well known, is in 1982, Prince Edward Island, a young maverick named Henry Duewel requested a cook named Thelma, who worked at a resort named Rustico Resort to make this dish. For a few years, this dish was known, on the Island as “Henry Fries” and could be ordered all over on the island, till it was named after it’s true name-POUTINE. Where Henry had or seen this dish is unknown, but to me it will always be known as “Henry Fries”
